Ingredients
Makes about 1 Litre
500ml milk
500ml double cream
12 egg yolks
180g caster sugar
Approx 150g heather honey
1. Put milk and cream in saucepan and warm slightly.
2. Place egg yolks and sugar in a bowl and whisk.
3. Once milk mixture is warm, pour over egg mixture and mix until just combine. Return to stove and stir frequently for about 5 – 10 minutes, until mixture coats the back of a spoon. Do not whisk on the heat.
4. Add heather honey to taste. Allow to cool in the fridge.
5. Once cool, churn in an ice cream machine. If you don’t have one, can place on a tray in the freezer. Using a fork, stir the mixture occasionally whilst setting. Place in an airtight container in the freezer.
